Ingredients

  • 1 cup Hathi Brand 100% Whole Wheat Chakki Atta
  • 4 cups full-fat milk
  • 1 cup grated or powdered jaggery
  • 1/4 cup mixed nuts (cashews, almonds, pistachios), chopped
  • 4-5 green cardamom pods, lightly crushed
  • 1 tablespoon ghee

Method

  • Heat ghee in a kadai on medium flame.
  • Add mixed nuts and sauté until golden brown. Set aside for garnish.
  • Add Hathi Brand 100% Whole Wheat Chakki Atta in the same pan and roast until golden brown and aromatic.
  • In another pot, bring milk to a gentle boil.
  • Slowly add the roasted Atta to the boiling milk, stirring continuously to prevent lumps.
  • Add grated jaggery and crushed cardamom pods, stirring until jaggery dissolves completely.
  • Simmer the Payasam on low flame, stirring occasionally, until it thickens to a creamy consistency.
  • Garnish with sautéed nuts.
